Make flaky, fruit-filled vegan pastries at home with a simple cinnamon apple filling.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup cold vegan butter, cubed
- 1/2 cup ice water
- 3 medium apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 tablespoon water (for glaze)
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon plant milk (for glaze)
Instructions
- Make the pastry dough: Combine flour and salt. Cut in the cold vegan butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough just comes together. Divide the dough in half, form into discs, wrap, and chill for at least 30 minutes.
- Prepare the filling: In a saucepan, combine diced apples, brown sugar, lemon juice, cinnamon, and cornstarch. Cook over medium heat, stirring occasionally, until the apples soften and the mixture thickens, about 8-10 minutes. Remove from heat and let cool completely.
- Roll out the dough: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). On a lightly floured surface, roll out one dough disc into a rectangle about 1/8 inch thick. Cut into four rectangles (about 4×3 inches each). Repeat with the second dough disc.
- Assemble the tarts: Place a spoonful of cooled apple filling onto the center of half the dough rectangles. Brush the edges with water. Top with the remaining dough rectangles. Press the edges firmly with a fork to seal. Cut two small slits in the top of each tart to allow steam to escape.
- Bake: Place the tarts on a baking sheet lined with parchment paper. Bake for 18-22 minutes, or until golden brown. Let cool completely on a wire rack.
- Make the glaze: Whisk together powdered sugar, plant milk, and 1 tablespoon of water until smooth. Drizzle over the cooled tarts.
Notes
- Keep the vegan butter and water very cold for the flakiest pastry.
- If you prefer a thicker glaze, use less plant milk.
- You can substitute apples with other firm fruits like pears or berries.
