- 4 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon minced garlic
- 1 teaspoon grated fresh ginger
- 8 large lettuce leaves (e.g., butter lettuce or romaine hearts)
Instructions
- In a small bowl, whisk together the honey, soy sauce, minced garlic, and ginger to make the sauce.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken slices and cook until browned and cooked through, about 5-7 minutes.
- Add the broccoli, bell pepper, and carrot to the skillet. Cook for 3-4 minutes until vegetables are tender-crisp.
- Pour the honey garlic sauce over the chicken and vegetables. Stir to coat everything evenly and cook for 1-2 minutes until the sauce thickens slightly. Remove from heat.
- Lay out the lettuce leaves. Spoon an equal amount of the chicken and vegetable mixture into the center of each lettuce leaf.
- Fold the sides of the lettuce over the filling and roll up tightly, like a wrap. Serve immediately.
Notes
- You can substitute other firm vegetables like snap peas or mushrooms.
- If you prefer a thicker sauce, simmer it for an extra minute before adding it to the chicken.
