- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2–4 tablespoons milk or cream
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, whisk together granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Fold in the mashed bananas, drained crushed pineapple, and chopped pecans.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the bread cools, prepare the frosting: In a large bowl, beat softened cream cheese and butter with an electric mixer until light and fluffy.
- Gradually add powdered sugar, 1 cup at a time, beating until smooth after each addition.
- Beat in vanilla extract and cinnamon.
- Add milk or cream, 1 tablespoon at a time, until the frosting reaches a spreadable consistency.
- Once the bread is completely cool, spread the cinnamon cream cheese frosting generously over the top.
- Garnish with additional chopped pecans, if desired.
- Slice and serve.
