Description
A simple recipe for a moist pound cake flavored with lemon and topped with a sweet lemon glaze.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup milk
- 1/4 cup fresh lemon juice
- Zest of 1 large lemon
- For the Glaze: 1 1/2 cups powdered sugar
- For the Glaze: 3 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 325 degrees F (160 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In a small bowl, combine the milk, 1/4 cup lemon juice, and lemon zest.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar and 3 tablespoons of lemon juice until smooth. Adjust consistency with more sugar or juice if needed.
- Drizzle the glaze over the cooled cake. Let the glaze set before slicing and serving.
Notes
- For a stronger lemon flavor, you can add 1 teaspoon of lemon extract to the batter.
- If the top of the cake browns too quickly during baking, loosely tent it with aluminum foil.
