Ingredients

  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chopped kale
  • 2 cups chopped spinach
  • 1 cup chopped broccoli florets
  • 1/2 cup chopped celery
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth. Bring to a simmer.
  5. Add broccoli and celery. Cook for 5 minutes.
  6. Stir in kale and spinach. Cook until greens wilt, about 3 minutes.
  7. Remove soup from heat. Stir in parsley.
  8. Season with salt and pepper to your taste.
  9. Serve hot.
