Description
A simple, nutrient-dense soup featuring green vegetables for immune support.
Ingredients

- 6 cups vegetable broth
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups chopped kale
- 2 cups chopped spinach
- 1 cup chopped broccoli florets
- 1/2 cup chopped celery
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth. Bring to a simmer.
- Add broccoli and celery. Cook for 5 minutes.
- Stir in kale and spinach. Cook until greens wilt, about 3 minutes.
- Remove soup from heat. Stir in parsley.
- Season with salt and pepper to your taste.
- Serve hot.
Notes
- For a smoother texture, you can blend half of the soup before adding the parsley.
- Use fresh or frozen vegetables.
