- 1 teaspoon vanilla extract

- 1/2 cup semi-sweet chocolate chips
- 1/4 cup white chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the semi-sweet and white chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Remove cookies from the oven and immediately sprinkle the tops with crushed peppermint candies.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger peppermint flavor, you can add 1/4 teaspoon of peppermint extract to the dough.
- Store cooled cookies in an airtight container at room temperature for up to one week.
