Description
A rich and cheesy seafood filling served inside a hollowed-out bread loaf.
Ingredients

- 1 round loaf sourdough bread (about 1.5 lbs)
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup seafood or chicken broth
- 8 ounces cooked mixed seafood (shrimp, crab meat)
- 4 ounces cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Carefully slice the top off the bread loaf and set the top aside. Scoop out the soft interior bread, leaving a sturdy shell about 1 inch thick. Reserve the scooped bread for dipping.
- Heat olive oil in a saucepan over medium heat. Add onion and celery; cook until soft, about 5 minutes.
- Whisk in flour until combined. Gradually whisk in milk and broth until the mixture thickens into a sauce.
- Reduce heat to low. Stir in cream cheese until melted and smooth.
- Fold in the cooked seafood, cheddar cheese, and Monterey Jack cheese. Stir until the cheese melts.
- Season with salt and pepper. Stir in parsley.
- Pour the seafood mixture into the hollowed bread bowl. Place the top piece of bread next to the bowl.
- Bake for 15 to 20 minutes, or until the filling is hot and bubbly and the bread crust is slightly crisp.
- Serve immediately with pieces of the reserved bread for dipping.
Notes
- You can use any combination of cooked seafood you prefer.
- For a richer flavor, substitute half the milk with heavy cream.
- If the filling seems too thick, add a splash more broth or milk until you reach your desired consistency.
