Description

A rich and cheesy seafood filling served inside a hollowed-out bread loaf.


Ingredients

  • 1 round loaf sourdough bread (about 1.5 lbs)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup seafood or chicken broth
  • 8 ounces cooked mixed seafood (shrimp, crab meat)
  • 4 ounces cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Carefully slice the top off the bread loaf and set the top aside. Scoop out the soft interior bread, leaving a sturdy shell about 1 inch thick. Reserve the scooped bread for dipping.
  3. Heat olive oil in a saucepan over medium heat. Add onion and celery; cook until soft, about 5 minutes.
  4. Whisk in flour until combined. Gradually whisk in milk and broth until the mixture thickens into a sauce.
  5. Reduce heat to low. Stir in cream cheese until melted and smooth.
  6. Fold in the cooked seafood, cheddar cheese, and Monterey Jack cheese. Stir until the cheese melts.
  7. Season with salt and pepper. Stir in parsley.
  8. Pour the seafood mixture into the hollowed bread bowl. Place the top piece of bread next to the bowl.
  9. Bake for 15 to 20 minutes, or until the filling is hot and bubbly and the bread crust is slightly crisp.
  10. Serve immediately with pieces of the reserved bread for dipping.

Notes

  • You can use any combination of cooked seafood you prefer.
  • For a richer flavor, substitute half the milk with heavy cream.
  • If the filling seems too thick, add a splash more broth or milk until you reach your desired consistency.
