A rich and dark chocolate cake with a hint of blackberry, perfect for a special occasion.
Ingredients

- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot water
- 1/2 cup blackberry jam
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add the eggs, buttermilk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
- Carefully stir in the hot water until the batter is smooth. The batter will be thin.
- Pour half of the batter into each prepared cake pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Once cooled, spread the blackberry jam evenly over the top of one cake layer. Place the second cake layer on top.
- Frost the cake as desired.
Notes
- For an extra gothic touch, consider using black or deep purple frosting.
- You can add a few drops of black food coloring to the batter for a darker hue.
