Instructions

  1. Cook gnocchi according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add spinach to the skillet. Cook until wilted, about 2-3 minutes.
  4. Pour in heavy cream and vegetable broth. Bring the mixture to a gentle simmer.
  5. Stir in the cooked gnocchi.
  6. Remove the skillet from the heat. Gently fold in the crumbled feta cheese.
