Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup unsweetened cocoa powder
  • 1 cup chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, beat the softened cream cheese and sour cream until smooth.
  7. Stir the cocoa powder into the cream cheese mixture until well combined.
  8. Gently fold the chocolate chips into the brownie batter.
  9. Pour half of the brownie batter into the prepared springform pan.
  10. Spread the cream cheese mixture evenly over the brownie batter.
  11. Dollop the remaining brownie batter over the cream cheese layer and spread gently to cover.
  12. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  13. While the cheesecake is baking, prepare the ganache. Heat the heavy cream in a small saucepan until simmering. Pour the hot cream over 1/2 cup of chocolate chips in a bowl. Let stand for 5 minutes, then whisk until smooth.
  14. Once the cheesecake is baked, let it cool in the pan for 10 minutes. Drizzle the chocolate ganache over the top.
  15. Chill the cheesecake for at least 4 hours, or until firm.
