A recipe for a layered cake inspired by classic tiramisu, featuring coffee-soaked layers and creamy mascarpone filling.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup strong brewed coffee, cooled
- 8 ounces mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon instant espresso powder
- Cocoa powder, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
- In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the flour mixture alternately with the buttermilk to the butter mixture, mixing until just combined. Do not overmix.
- Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- While the cakes cool, prepare the filling. Beat the softened mascarpone cheese, powdered sugar, and espresso powder together until smooth.
- Once the cakes are completely cool, place one layer on a serving plate. Brush the top surface generously with the cooled brewed coffee.
- Spread half of the mascarpone filling over the coffee-soaked layer.
- Top with the second cake layer. Brush the top surface generously with the remaining coffee.
- Spread the remaining mascarpone filling over the top of the cake.
- Chill the cake for at least 2 hours before serving. Dust the top with cocoa powder just before slicing.
Notes
- Use high-quality strong coffee for the best flavor.
- You can substitute heavy cream for some of the buttermilk if you prefer a richer batter.
- For a stronger coffee flavor, mix 1 tablespoon of instant espresso powder into the cooled brewed coffee.
