  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup strong brewed coffee, cooled
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon instant espresso powder
  • Cocoa powder, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the flour mixture alternately with the buttermilk to the butter mixture, mixing until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  7. While the cakes cool, prepare the filling. Beat the softened mascarpone cheese, powdered sugar, and espresso powder together until smooth.
  8. Once the cakes are completely cool, place one layer on a serving plate. Brush the top surface generously with the cooled brewed coffee.
  9. Spread half of the mascarpone filling over the coffee-soaked layer.
  10. Top with the second cake layer. Brush the top surface generously with the remaining coffee.
  11. Spread the remaining mascarpone filling over the top of the cake.
  12. Chill the cake for at least 2 hours before serving. Dust the top with cocoa powder just before slicing.

Notes

  • Use high-quality strong coffee for the best flavor.
  • You can substitute heavy cream for some of the buttermilk if you prefer a richer batter.
  • For a stronger coffee flavor, mix 1 tablespoon of instant espresso powder into the cooled brewed coffee.
