- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup Irish whiskey
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until browned on both sides and cooked through, about 6-8 minutes per side. Remove the chicken and set aside.
- Add the chopped onion to the same skillet and cook until softened, about 3 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
- Add the Irish whiskey and let it simmer for 2 minutes, allowing some alcohol to evaporate.
- Stir in the heavy cream and Dijon mustard. Bring the sauce to a gentle simmer and cook until slightly thickened, about 3-5 minutes.
- Return the cooked chicken to the skillet and coat it with the sauce.
- Heat through for 1 minute.
- Garnish with fresh parsley before serving.
Notes
- Use a good quality Irish whiskey for the best flavor in the sauce.
- If you prefer a thicker sauce, reduce the liquid slightly more before adding the cream.
