- 1 cup cooked and mashed sweet potato
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup whole wheat flour
- 1/2 cup dark chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, whisk together the mashed sweet potato, cocoa powder, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.
- In a separate small bowl, mix the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chocolate chips.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan before cutting into squares.
Notes
- For fudgier brownies, slightly underbake them.
- You can substitute almond flour for the whole wheat flour for a gluten-free version.
- Store leftovers in an airtight container at room temperature for up to three days.
