- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup ground almonds
- 1 cup ricotta cheese
- 3/4 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour an 8-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, salt, and ground almonds. Set aside.
- In a large bowl, beat the ricotta cheese, sugar, eggs, vanilla extract, and lemon zest until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the melted butter.
- Pour the batter into the prepared cake pan.
- Bake for 40 to 45 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

- Dust with powdered sugar before serving for a finished look.
