Ingredients

- 1 (11 ounce) can mandarin oranges, drained
- 1 (15 ounce) can pineapple tidbits, drained
- 1 cup miniature marshmallows
- 1 cup shredded sweetened coconut
- 1 cup small curd cottage cheese
- 1 cup heavy whipping cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the drained mandarin oranges, pineapple tidbits, marshmallows, and coconut.
- In a separate medium bowl, whip the heavy cream with the sugar and vanilla extract until soft peaks form.
- Gently fold the cottage cheese into the whipped cream mixture.
- Carefully fold the fruit and marshmallow mixture into the cream mixture until just combined.
- Cover the bowl and chill in the refrigerator for at least 2 hours before serving.
Notes
- You can substitute sour cream for cottage cheese for a tangier flavor.
- Chill the salad for longer periods, up to 4 hours, for better flavor melding.
