- 1 1/2 cups crushed Biscoff cookies
- 1/4 cup melted unsalted butter
- 1 (15 ounce) can apple butter
- 1 large egg
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Mix the crushed Biscoff cookies and melted butter until combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate.
- Bake the crust for 10 minutes. Let it cool slightly.
- In a medium bowl, whisk together the apple butter, egg, heavy cream, vanilla extract, and cinnamon until smooth.
- Pour the filling into the cooled crust.
- Bake for 35 to 40 minutes, or until the center is mostly set but still has a slight jiggle.
- Cool the pie completely on a wire rack before slicing.
Notes
- You can use store-bought Biscoff cookie crumbs to save time.
- Chill the pie for at least 2 hours before serving for the best texture.
