A simple recipe for a moist apple cider cake perfect for cool weather.

- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup apple cider, reduced
- 1/2 cup packed light brown sugar (for topping)
- 1/4 cup chopped pecans (optional, for topping)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch bundt pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the reduced apple cider, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
- Pour the batter into the prepared bundt pan.
- In a small bowl, mix the brown sugar and pecans (if using). Sprinkle this mixture evenly over the top of the batter.
- Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
Notes
- To reduce the apple cider, simmer 2 cups of cider in a saucepan over medium heat until you have 1 cup remaining. Let it cool before using.
- You can dust the cooled cake with powdered sugar instead of using the brown sugar topping.
