A simple recipe for a moist apple cider cake perfect for cool weather.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup apple cider, reduced
  • 1/2 cup packed light brown sugar (for topping)
  • 1/4 cup chopped pecans (optional, for topping)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch bundt pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the reduced apple cider, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
  6. Pour the batter into the prepared bundt pan.
  7. In a small bowl, mix the brown sugar and pecans (if using). Sprinkle this mixture evenly over the top of the batter.
  8. Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.

Notes

  • To reduce the apple cider, simmer 2 cups of cider in a saucepan over medium heat until you have 1 cup remaining. Let it cool before using.
  • You can dust the cooled cake with powdered sugar instead of using the brown sugar topping.
