  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups peeled and chopped apples
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, cold and cut into pieces
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and 1 cup granulated sugar until smooth.
  5. Beat in eggs one at a time, then stir in vanilla extract, 1/2 teaspoon cinnamon, and nutmeg.
  6. Pour cream cheese mixture over the prepared crust.
  7. In a separate bowl, combine chopped apples, flour, brown sugar, 1/4 cup cold butter, and 1/2 teaspoon cinnamon. Mix until crumbly.
  8. Sprinkle the apple crisp topping evenly over the cheesecake batter.
  9. Bake for 50-60 minutes, or until the center is almost set.
  10. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  11. Remove from oven and cool completely on a wire rack.
  12. Chill in the refrigerator for at least 4 hours before serving.
