  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix the granulated sugar, brown sugar, and vegetable oil. Beat in the eggs one at a time. Stir in the applesauce.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the chopped walnuts, if using.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan before serving.

Notes

  • You can use sweetened applesauce, but reduce the added sugar by 1/4 cup.
