Simple recipe for flavorful BBQ chicken sliders topped with a crisp, tangy coleslaw.

- 1.5 lbs boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/4 cup water
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 12 slider buns
- 1 tablespoon butter, melted
- For Coleslaw:
- 2 cups shredded cabbage mix
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- Place chicken breasts in a slow cooker.
- In a bowl, mix BBQ sauce, water, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper. Pour sauce over the chicken.
- Cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
- Remove chicken and shred using two forks. Return shredded chicken to the sauce and mix well. Keep warm.
- Prepare coleslaw: In a medium bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper.
- Add shredded cabbage mix to the dressing and toss to coat evenly.
- Slice slider buns in half horizontally. Brush the cut sides lightly with melted butter.
- Toast the buns lightly in a skillet or under the broiler until golden brown.
- Assemble sliders: Place a portion of the BBQ chicken mixture on the bottom half of each bun. Top with a spoonful of coleslaw. Place the top bun on.
- Serve immediately.
Notes
- You can cook the chicken in a pot on the stovetop if you do not have a slow cooker. Simmer until fully cooked, then shred.
- For extra flavor, brush the tops of the assembled sliders with a little extra BBQ sauce before serving.
