A simple recipe for classic beef stroganoff, perfect for a cozy meal.

- 1.5 lbs beef sirloin or tenderloin, thinly sliced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 8 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 0.5 cup sour cream
- 1 tablespoon Dijon mustard
- 12 oz egg noodles
Instructions
- Cook egg noodles according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add beef and cook until browned. Remove beef from the skillet and set aside.
- Add onion and mushrooms to the skillet. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Sprinkle flour over the vegetables and stir for 1 minute.
- Gradually whisk in beef broth until smooth. Bring to a simmer and cook until slightly thickened.
- Stir in salt, pepper, and Dijon mustard.
- Return the beef to the skillet. Reduce heat to low.
- Remove the skillet from the heat. Stir in sour cream until fully combined. Do not boil after adding sour cream.
- Serve the beef mixture over the cooked egg noodles.
Notes
- For richer flavor, use beef broth made from roasted bones.
- If you do not have sirloin, use flank steak cut thinly against the grain.
