- 1 (4-5 pound) boneless leg of lamb, trimmed
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a small bowl, mix the minced garlic, chopped rosemary, olive oil, salt, and pepper to create a paste.
- Place the leg of lamb in a roasting pan. Rub the garlic-rosemary paste evenly over the entire surface of the lamb.
- Roast for 15 minutes at 400 degrees Fahrenheit.
- Reduce the oven temperature to 325 degrees Fahrenheit (160 degrees Celsius).
- Continue roasting until the internal temperature reaches 135 degrees Fahrenheit (57 degrees Celsius) for medium-rare, about 1 hour and 15 minutes to 1 hour and 30 minutes, depending on the size.
- Remove the lamb from the oven and tent loosely with foil. Let it rest for 15 minutes before slicing.
- Slice the lamb against the grain and serve.
Notes
- For easier carving, tie the lamb loosely with butcher’s twine before seasoning if it seems difficult to handle.
- If you prefer a more well-done roast, cook until the internal temperature reaches 150 degrees Fahrenheit (65 degrees Celsius).
