A fast recipe for creamy chicken using Boursin cheese for rich flavor.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 shallot, minced
- 2 cloves garlic, minced
- 8 ounces Boursin cheese (Garlic & Fine Herbs flavor)
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cut chicken breasts into serving-sized pieces. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown the chicken on both sides, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
- Reduce heat to medium. Add minced shallot to the skillet and cook until softened, about 2 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
- Stir in the Boursin cheese until it melts into a smooth sauce.
- Pour in the heavy cream and stir until the sauce thickens slightly.
- Return the chicken to the skillet. Reduce heat to low, cover, and simmer for 5-7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
- Serve immediately, garnished with fresh parsley.
Notes
- You can use any flavor of Boursin cheese you prefer.
- For a thicker sauce, simmer uncovered for an extra minute before returning the chicken.
