Irresistible Brie En Croute With Cranberries

Description

A simple recipe for baked brie wrapped in puff pastry with a cranberry filling.


Ingredients

  • 1 (8 ounce) wheel of brie cheese
  • 1 sheet frozen puff pastry, thawed
  • 1/2 cup fresh or frozen cranberries
  • 1/4 cup brown sugar, packed
  • 1 tablespoon water
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a small saucepan, combine the cranberries, brown sugar, and water. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly, about 5 to 7 minutes. Remove from heat and let cool completely.
  3. Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into a square large enough to completely wrap the brie wheel.
  4. Place the brie wheel in the center of the pastry square. Spoon the cooled cranberry mixture evenly over the top of the brie.
  5. Bring the edges of the pastry up and over the brie, meeting in the center. Pinch the seams together firmly to seal the cheese inside. Trim any excess pastry.
  6. Place the wrapped brie, seam-side down, onto the prepared baking sheet.
  7. Brush the entire surface of the pastry with the beaten egg wash. You can score the top lightly with a knife for decoration, if desired.
  8. Bake for 20 to 25 minutes, or until the pastry is golden brown and puffed.
  9. Let the brie cool on the baking sheet for 5 minutes before transferring it to a serving plate. Serve warm.

Notes

  • Serve immediately with crackers or slices of baguette for dipping.
  • If the pastry starts browning too quickly, loosely tent it with aluminum foil.
