  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 6 cups sliced fresh peaches (about 2 pounds)
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon lemon juice
  • 1 large egg, beaten
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your double pie crust according to your recipe.
  3. In a large bowl, melt the butter in the microwave or on the stovetop. Cook the butter, stirring occasionally, until it turns a golden brown color and smells nutty. This is brown butter.
  4. In a separate bowl, whisk together the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt.
  5. Add the sliced peaches and halved strawberries to the dry ingredients. Gently toss to coat the fruit evenly.
  6. Pour the brown butter over the fruit mixture and toss again to combine. Stir in the lemon juice.
  7. Pour the fruit filling into the bottom pie crust.
  8. Place the top pie crust over the filling. Crimp the edges to seal and cut vents in the top crust.
  9. Brush the top crust with the beaten egg and sprinkle with the remaining 1 tablespoon of granulated sugar.
  10. Bake for 15 minutes at 425°F (220°C).
  11. Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, loosely tent it with aluminum foil.
  12. Let the pie cool completely on a wire rack for at least 2-3 hours before slicing and serving.

Notes

  • For a deeper flavor, you can add a pinch of cardamom to the spice mixture.
  • Ensure your peaches are ripe but still firm to prevent them from becoming too mushy.
  • If you don’t have fresh strawberries, you can use frozen ones, but be sure to drain them well.
