- 1 recipe for double pie crust
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 6 cups sliced fresh peaches (about 2 pounds)
- 2 cups fresh strawberries, hulled and halved
- 1 tablespoon lemon juice
- 1 large egg, beaten
- 1 tablespoon granulated sugar
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare your double pie crust according to your recipe.
- In a large bowl, melt the butter in the microwave or on the stovetop. Cook the butter, stirring occasionally, until it turns a golden brown color and smells nutty. This is brown butter.
- In a separate bowl, whisk together the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt.
- Add the sliced peaches and halved strawberries to the dry ingredients. Gently toss to coat the fruit evenly.
- Pour the brown butter over the fruit mixture and toss again to combine. Stir in the lemon juice.
- Pour the fruit filling into the bottom pie crust.
- Place the top pie crust over the filling. Crimp the edges to seal and cut vents in the top crust.
- Brush the top crust with the beaten egg and sprinkle with the remaining 1 tablespoon of granulated sugar.
- Bake for 15 minutes at 425°F (220°C).
- Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, loosely tent it with aluminum foil.
- Let the pie cool completely on a wire rack for at least 2-3 hours before slicing and serving.
Notes
- For a deeper flavor, you can add a pinch of cardamom to the spice mixture.
- Ensure your peaches are ripe but still firm to prevent them from becoming too mushy.
- If you don’t have fresh strawberries, you can use frozen ones, but be sure to drain them well.
