- 2 lbs carrots, peeled and cut into 1-inch pieces
- 1/4 cup unsalted butter, melted
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the cut carrots in a large bowl.
- In a small bowl, whisk together the melted butter, brown sugar, salt, and pepper.
- Pour the butter mixture over the carrots and toss until they are evenly coated.
- Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
- Bake for 25 to 30 minutes, stirring halfway through, until the carrots are tender and lightly caramelized.
- Serve immediately.
Notes
- For extra flavor, add a pinch of ground cinnamon to the sugar mixture before tossing with the carrots.
- If you prefer softer carrots, cover the baking sheet loosely with foil for the first 15 minutes of baking.
