A simple recipe combining the flavors of bruschetta with a classic grilled cheese sandwich.

- 2 slices bread
- 2 tablespoons butter, softened
- 1/4 cup chopped fresh tomatoes
- 1 tablespoon chopped fresh basil
- 1 clove garlic, minced
- 1 teaspoon olive oil
- Pinch of salt
- Pinch of black pepper
- 2 slices mozzarella cheese
Instructions
- In a small bowl, mix the chopped tomatoes, basil, minced garlic, olive oil, salt, and pepper. This is your bruschetta topping.
- Spread butter evenly on one side of each slice of bread.
- Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
- Layer the mozzarella cheese on top of the bread in the skillet.
- Spoon the bruschetta topping over the cheese.
- Top with the second slice of bread, butter-side up.
- Grill for 3 to 4 minutes per side, until the bread is golden brown and the cheese is melted.
- Remove from the skillet, slice in half, and serve immediately.
Notes
- Use sourdough or Italian bread for the best texture.
- You can add a drizzle of balsamic glaze after cooking for extra flavor.
