Ingredients

  • 1.5 lb Brussels sprouts, trimmed and halved
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Blanch the Brussels sprouts in boiling salted water for 5 minutes. Drain them well and set aside.
  3. Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute.
  4. Gradually whisk in the milk until the mixture thickens into a smooth sauce.
  5. Remove the saucepan from the heat. Stir in the salt, pepper, nutmeg, Gruyere cheese, and Parmesan cheese until melted and smooth.
  6. Place the blanched Brussels sprouts in the prepared baking dish. Pour the cheese sauce evenly over the sprouts.
  7. Sprinkle the breadcrumbs over the top layer.
  8. Bake for 25 to 30 minutes, or until the top is golden brown and the sauce is bubbly.

Notes

  • You can substitute Gruyere with sharp white cheddar for a different flavor profile.
  • For extra crispiness, toast the breadcrumbs in a dry skillet before sprinkling them on top.
