Ingredients

  • 1 cup warm water (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter, melted, plus more for brushing
  • 10 cups water
  • ½ cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse salt, for topping

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Stir in 1 tablespoon melted butter and salt. Gradually add flour, mixing until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. In a large pot, bring 10 cups of water and baking soda to a boil.
  7. Punch down the dough and divide it into 4 equal pieces. Roll each piece into a rope about 1 inch thick. Cut each rope into 1-inch pieces.
  8. Working in batches, drop pretzel bites into the boiling water for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
  9. Brush the tops of the pretzel bites with the beaten egg wash and sprinkle with coarse salt.
  10. Bake for 10-12 minutes, or until golden brown.
  11. Brush with melted butter immediately after removing from the oven.

Notes

  • For extra flavor, you can add a pinch of garlic powder or onion powder to the dough.
