- 1 cup warm water (105-115°F)
- 2 ¼ teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 3 ½ cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 1 tablespoon unsalted butter, melted, plus more for brushing
- 10 cups water
- ½ cup baking soda
- 1 large egg, beaten (for egg wash)
- Coarse salt, for topping
Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
- Stir in 1 tablespoon melted butter and salt. Gradually add flour, mixing until a shaggy dough forms.
- Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large pot, bring 10 cups of water and baking soda to a boil.
- Punch down the dough and divide it into 4 equal pieces. Roll each piece into a rope about 1 inch thick. Cut each rope into 1-inch pieces.
- Working in batches, drop pretzel bites into the boiling water for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
- Brush the tops of the pretzel bites with the beaten egg wash and sprinkle with coarse salt.
- Bake for 10-12 minutes, or until golden brown.
- Brush with melted butter immediately after removing from the oven.
Notes
- For extra flavor, you can add a pinch of garlic powder or onion powder to the dough.
- Serve warm with your favorite dipping sauces like cheese sauce or mustard.
