A quick recipe for moist banana bread using a box of cake mix.

- 1 box (about 15.25 oz) yellow cake mix
- 1 cup mashed ripe bananas (about 3 medium)
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, combine the cake mix, mashed bananas, vegetable oil, eggs, and vanilla extract. Mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For a richer flavor, use slightly overripe bananas.
- You can add 1/2 cup of chopped walnuts or chocolate chips to the batter before baking.
