Description

A simple recipe for carrot cake flavored overnight oats.


Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup grated carrot
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground ginger
  • 1 tablespoon chopped walnuts (optional)

Instructions

  1. Combine the rolled oats, milk, grated carrot, chia seeds, maple syrup, cinnamon, nutmeg, and ginger in a jar or container.
  2. Stir all ingredients well until fully mixed.
  3. If using, stir in the chopped walnuts.
  4. Seal the container and refrigerate for at least 4 hours, or preferably overnight.
  5. In the morning, stir the oats before eating. Add a splash more milk if the consistency is too thick for your liking.

Notes

  • For a sweeter taste, increase the maple syrup to 1.5 teaspoons.
  • You can top with a dollop of Greek yogurt before serving.
