A simple recipe for a baked casserole featuring rice, broccoli, and cheese sauce.

- 2 cups cooked white rice
- 2 cups fresh or frozen broccoli florets
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese, divided
- 1/4 cup chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crushed butter crackers (optional topping)
- 2 tablespoons melted butter (optional topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- If using fresh broccoli, steam or boil the florets until tender-crisp. Drain well. If using frozen, thaw and drain thoroughly.
- In a large bowl, combine the cooked rice, broccoli, cream of chicken soup, milk, 3/4 cup of the shredded cheese, chopped onion, salt, and pepper. Mix until everything is evenly coated.
- Pour the mixture into the prepared baking dish.
- In a small bowl, mix the crushed butter crackers and melted butter, if using. Sprinkle this mixture over the casserole.
- Bake for 25 minutes.
- Remove the casserole from the oven and sprinkle the remaining 1/4 cup of cheese over the top.
- Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can substitute cream of mushroom soup for cream of chicken soup if you prefer.
- For a richer flavor, use sharp cheddar cheese.
- If you do not use the cracker topping, bake for 30 minutes total.
