- 1 loaf French bread
- 2 cups cooked, shredded chicken
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 (14.5 ounce) can diced tomatoes, drained
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Slice the French bread in half lengthwise.
- In a medium bowl, combine the shredded chicken, mozzarella cheese, and Parmesan cheese.
- In a separate small bowl, mix the drained diced tomatoes, chopped basil, minced garlic, olive oil, and balsamic vinegar. Season with salt and pepper.
- Spread the chicken and cheese mixture evenly over both halves of the bread.
- Spoon the tomato and basil mixture over the cheese layer.
- Place the bread halves on a baking sheet.
- Bake for 12 to 15 minutes, or until the cheese is melted and bubbly and the bread is lightly toasted.
- Slice into serving pieces and serve warm.
Notes
- You can use rotisserie chicken for faster preparation.
- For extra flavor, lightly toast the bread halves before adding toppings.
