  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
  5. Remove the baking sheet from the oven and sprinkle the cheddar cheese and Parmesan cheese over the potatoes.
  6. Return the baking sheet to the oven for another 5 minutes, or until the cheese is melted and bubbly.
