- 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 tablespoon ranch seasoning mix
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potato cubes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
- Remove the baking sheet from the oven and sprinkle the cheddar cheese and Parmesan cheese over the potatoes.
- Return the baking sheet to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Serve hot.
