A quick and satisfying cheesy taco pasta dish ready in 30 minutes.

- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup salsa
- 2 cups cooked pasta
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, chopped cilantro, avocado
Instructions
- Brown the ground beef and chopped onion in a large skillet over medium-high heat. Drain excess fat.
- Stir in the taco seasoning, diced tomatoes, black beans, and salsa. Bring to a simmer.
- Reduce heat and cook for 5 minutes, stirring occasionally.
- Stir in the cooked pasta and 1 cup of the shredded cheddar cheese. Cook until the cheese is melted.
- Transfer the pasta mixture to a baking dish. Top with the remaining 1 cup of cheddar cheese.
- Bake at 375°F (190°C) for 10-15 minutes, or until the cheese is bubbly and lightly browned.
- Serve hot with your favorite toppings.
Notes
- For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño to the simmering sauce.
- You can substitute ground turkey or chicken for the ground beef.
- Any short pasta shape will work well in this recipe.
