Description
A simple one-pan meal combining seasoned ground meat, rice, beans, and melted cheese.
Ingredients

- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 medium onion, chopped
- 1 packet (1 ounce) taco seasoning mix
- 1 cup uncooked long-grain white rice
- 2 cups water
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream for topping (optional)
- 2 tablespoons chopped fresh cilantro for garnish (optional)
Instructions
- Heat the oil in a large skillet over medium-high heat.
- Add the ground beef and onion to the skillet. Cook, breaking up the meat, until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
- Stir in the taco seasoning mix. Cook for 1 minute.
- Add the uncooked rice, water, black beans, and diced tomatoes with green chilies to the skillet. Stir well to combine.
- Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for 15 to 20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during simmering.
- Remove the skillet from the heat. Sprinkle the shredded cheese evenly over the top of the rice mixture. Cover the skillet again and let it stand for 5 minutes, allowing the cheese to melt.
- Serve immediately, topping individual portions with sour cream and cilantro, if desired.
Notes
- You can substitute ground turkey or chicken for the ground beef.
- Use your favorite type of shredded cheese, such as Monterey Jack or a Mexican blend.
