Description
A simple recipe for a cherry and amaretto flavored tiramisu dessert.

- 1 cup strong brewed coffee, cooled
- 1/4 cup amaretto liqueur
- 1 teaspoon vanilla extract
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup confectioners’ sugar
- 1 teaspoon almond extract
- 1 cup heavy cream
- 1 (7 ounce) package ladyfingers
- 1 cup fresh or frozen (thawed) pitted cherries, halved
- 1/4 cup cocoa powder, for dusting
Instructions
- Mix the cooled coffee, amaretto, and vanilla extract in a shallow bowl.
- In a separate bowl, beat the cream cheese, granulated sugar, confectioners’ sugar, and almond extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they do not become too soggy.
- Arrange a single layer of dipped ladyfingers in the bottom of an 8×8 inch baking dish.
- Spread half of the cream mixture over the ladyfingers.
- Scatter half of the halved cherries over the cream layer.
- Repeat the layers: dipped ladyfingers, remaining cream mixture, and remaining cherries.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, dust the top generously with cocoa powder.
Notes
- Use good quality amaretto for the best flavor.
- If using frozen cherries, make sure they are completely thawed and drained before using.
