Simple bars with a buttery crust, sweet cherry filling, and a crumbly topping.

- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1 (21 ounce) can cherry pie filling
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a medium bowl, combine the flour, oats, brown sugar, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Press two-thirds of the crumb mixture evenly into the bottom of the prepared pan.
- In a separate small bowl, whisk together the egg and vanilla extract.
- Gently stir the egg mixture into the remaining one-third of the crumb mixture until just combined. This will be your topping.
- Spread the cherry pie filling evenly over the crust layer in the pan.
- Sprinkle the remaining crumb mixture evenly over the cherry filling.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the bars cool completely in the pan on a wire rack before lifting out using the parchment paper overhang and cutting into squares.
Notes
- For a firmer filling, you can chill the bars for at least one hour before cutting.
- You can substitute almond extract for vanilla extract for a different flavor profile.
