Description

Simple bars with a buttery crust, sweet cherry filling, and a crumbly topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 (21 ounce) can cherry pie filling
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the flour, oats, brown sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture evenly into the bottom of the prepared pan.
  5. In a separate small bowl, whisk together the egg and vanilla extract.
  6. Gently stir the egg mixture into the remaining one-third of the crumb mixture until just combined. This will be your topping.
  7. Spread the cherry pie filling evenly over the crust layer in the pan.
  8. Sprinkle the remaining crumb mixture evenly over the cherry filling.
  9. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let the bars cool completely in the pan on a wire rack before lifting out using the parchment paper overhang and cutting into squares.

Notes

  • For a firmer filling, you can chill the bars for at least one hour before cutting.
  • You can substitute almond extract for vanilla extract for a different flavor profile.
