  • 1 teaspoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Make the pastry: Combine flour and salt in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough just comes together. Divide the dough in half, form into discs, wrap, and chill for 30 minutes.
  2. Prepare the filling: In a saucepan, combine cherries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes. Remove from heat and let cool completely.
  3. Assemble the pies: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Roll out one dough disc on a lightly floured surface. Cut into 4-inch circles.
  4. Place one tablespoon of cooled cherry filling onto the center of each circle. Brush the edges with the beaten egg. Fold the dough over to form a half-moon shape and crimp the edges with a fork to seal. Cut a small slit in the top of each pie for venting.
  5. Place pies on a baking sheet lined with parchment paper. Brush the tops with the remaining egg wash and sprinkle with coarse sugar.
