Description
A recipe for a moist layer cake flavored with cherry, topped with a tangy cream cheese frosting.

- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened

- 2 large eggs

- 1/2 cup cherry pie filling, drained, reserving juice
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon reserved cherry juice
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the drained cherry pie filling pieces.
- Divide the batter evenly between the prepared cake pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- To make the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract. Mix until creamy. Stir in the reserved cherry juice.
- Once the cakes are completely cool, frost the first layer, top with the second layer, and frost the top and sides of the cake.
Notes
- You can use fresh or frozen cherries if you prefer, but make sure to chop them before folding them into the batter.
- For a stronger cherry flavor, add 1/4 teaspoon of almond extract to the cake batter.
