A simple and delicious chicken fajita casserole perfect for a weeknight dinner.

- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 1 packet fajita seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Add chicken strips and cook until browned. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the same skillet. Cook until softened, about 5-7 minutes.
- Stir in the fajita seasoning, black beans, and diced tomatoes with green chilies. Bring to a simmer.
- Return the cooked chicken to the skillet. Stir to combine.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve hot with your favorite toppings.
Notes
- For a spicier casserole, add a pinch of cayenne pepper or a diced jalapeño to the vegetable mixture.
- You can substitute shredded rotisserie chicken for raw chicken to save time.
