Simple meatballs flavored like classic chicken piccata.

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix gently until just combined; do not overmix.
- Roll the mixture into 1-inch meatballs. Place them on the prepared baking sheet.
- Bake for 15-18 minutes, or until cooked through.
- While the meatballs bake, prepare the sauce. In a small skillet over medium heat, add the olive oil.
- Add the chicken broth and lemon juice to the skillet. Bring to a simmer.
- Stir in the drained capers. Let the sauce simmer for 3 minutes.
- Remove the skillet from the heat. Whisk in the butter until the sauce is smooth.
- Add the cooked meatballs to the skillet with the sauce. Toss gently to coat.
- Sprinkle with fresh chopped parsley before serving.
Notes
- You can use panko breadcrumbs for a slightly crispier texture.
- For an extra bright flavor, add a teaspoon of lemon zest to the meatball mixture.
