Ingredients

- 4 boneless, skinless chicken breasts, pounded thin
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Place flour, salt, and pepper on a plate. Dredge each chicken breast in the flour mixture, shaking off excess.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken to the skillet and cook for 3-4 minutes per side until golden brown and cooked through. Remove chicken and set aside.
- Pour white wine into the skillet and scrape up any browned bits from the bottom. Let it reduce slightly for 1 minute.
- Add chicken broth and lemon juice to the skillet. Bring to a simmer.
- Stir in capers and cook for 1 minute.
- Return the chicken to the skillet and spoon the sauce over it.
- Sprinkle with fresh parsley before serving.
Notes
- Serve immediately over pasta or rice for a complete meal.
- You can substitute chicken broth with vegetable broth if preferred.
