- 1 pound ground chorizo sausage
- 1 package (6 ounces) dry bread stuffing mix (with poultry seasoning)
- 1 3/4 cups boiling water
- 1/2 cup milk
- 2 large eggs, lightly beaten
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Cook the ground chorizo in a large skillet over medium heat until fully browned. Drain off any excess grease.
- In a large bowl, combine the dry stuffing mix, boiling water, milk, and beaten eggs. Stir until just combined.
- Fold the cooked chorizo and shredded cheddar cheese into the stuffing mixture.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 25 to 30 minutes, or until the casserole is heated through and lightly golden on top.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can substitute turkey or pork sausage for chorizo if you prefer a milder flavor.
- For a richer flavor, add 1/4 cup of chopped onion when cooking the sausage.
