Ingredients

  • 1 pound ground chorizo sausage
  • 1 package (6 ounces) dry bread stuffing mix (with poultry seasoning)
  • 1 3/4 cups boiling water
  • 1/2 cup milk
  • 2 large eggs, lightly beaten
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground chorizo in a large skillet over medium heat until fully browned. Drain off any excess grease.
  3. In a large bowl, combine the dry stuffing mix, boiling water, milk, and beaten eggs. Stir until just combined.
  4. Fold the cooked chorizo and shredded cheddar cheese into the stuffing mixture.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Bake for 25 to 30 minutes, or until the casserole is heated through and lightly golden on top.
  7. Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute turkey or pork sausage for chorizo if you prefer a milder flavor.
