- 2 large chicken breasts, cooked and diced
- 6 slices bacon, cooked and crumbled
- 2 large hard-boiled eggs, chopped
- 1 cup cherry tomatoes, halved
- 1 medium avocado, diced
- 1/2 cup crumbled blue cheese
- 1/2 cup shredded Swiss cheese
- 4 cups mixed greens (romaine, iceberg)
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper to make the dressing. Set aside.
- Arrange the mixed greens on a large platter or in individual bowls.
- Arrange the remaining ingredients in distinct rows over the greens: chicken, bacon, eggs, tomatoes, avocado, blue cheese, and Swiss cheese.
- Drizzle the dressing over the salad just before serving.
Notes
- You can substitute turkey bacon for regular bacon.
- For a quicker meal, use pre-cooked rotisserie chicken.
