- 6 cups crumbled cornbread
- 1 cup chopped celery
- 1 cup chopped onion
- 1/2 cup cooked bacon, crumbled
- 1/2 cup (1 stick) unsalted butter
- 2 large eggs, lightly beaten
- 2 cups chicken broth
- 1 teaspoon dried sage
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
- In a large skillet, melt the butter over medium heat. Add the celery and onion. Cook until soft, about 5 to 7 minutes.
- Stir in the crumbled cornbread, bacon, sage, and thyme into the skillet. Mix well.
- In a separate bowl, whisk together the chicken broth and eggs. Pour this mixture over the cornbread mixture. Add salt and pepper. Mix until just combined. Do not overmix.
- Transfer the stuffing mixture to the prepared baking dish.
- Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
Notes
- For crispier edges, let the stuffing cool slightly before serving.
- You can substitute turkey broth for chicken broth if desired.
