Ingredients

- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup brown or green lentils, rinsed
- 3 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until lentils are tender.
- Stir in heavy cream, Parmesan cheese, and thyme.
- Cook for 5 minutes, stirring often, until the mixture thickens slightly.
- Season with salt and pepper to your liking.
Notes
- For a thicker consistency, cook uncovered for the last 10 minutes.
- You can substitute vegetable broth with chicken broth.
