Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup brown or green lentils, rinsed
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until lentils are tender.
  5. Stir in heavy cream, Parmesan cheese, and thyme.
  6. Cook for 5 minutes, stirring often, until the mixture thickens slightly.
  7. Season with salt and pepper to your liking.

Notes

  • For a thicker consistency, cook uncovered for the last 10 minutes.
  • You can substitute vegetable broth with chicken broth.
