Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, combine the flour, softened butter, 1/4 cup sugar, and salt. Mix until crumbly. Press this mixture evenly into the bottom of the prepared baking pan to form the crust.
- In a separate bowl, whisk together the chopped rhubarb, 1 cup sugar, and 1/4 cup flour.
- In another bowl, beat the eggs, then whisk in the milk and vanilla extract.
- Pour the egg mixture over the rhubarb mixture and stir until well combined.
- Spread the rhubarb custard filling evenly over the crust in the baking pan.
- Bake for 35-45 minutes, or until the custard is set and the top is lightly golden.
- Let the bars cool completely in the pan before cutting into squares.

- For a richer flavor, you can add a pinch of cinnamon to the crust mixture.
