Simple and delicious carrot cake truffles perfect for any occasion.
Ingredients

- 1 box (15.25 oz) spice cake mix
- 1/4 cup vegetable oil
- 3 large eggs
- 1/4 cup water
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 1/4 cup chopped pecans (optional)
- 1 cup white chocolate chips
- 1 tablespoon vegetable shortening
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the cake mix, oil, eggs, and water. Beat until well combined.
- Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely. Crumble the cake into a large bowl.
- In a separate bowl, beat the cream cheese and butter until smooth. Add the vanilla extract and powdered sugar, and beat until combined.
- Add the cream cheese mixture to the crumbled cake and mix until well combined. Stir in the chopped pecans, if using.
- Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Chill the truffles in the refrigerator for at least 30 minutes.
- Melt the white chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip each truffle into the melted white chocolate, coating completely. Place the coated truffles back on the parchment-lined baking sheet.
- Let the chocolate set completely before serving.
Notes
- For a different flavor, you can use a yellow cake mix and add 1 teaspoon of cinnamon and 1/2 teaspoon of nutmeg.
- Store leftover truffles in an airtight container in the refrigerator.
