Description

Simple recipe for grilled chicken skewers coated in garlic and Parmesan cheese.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a medium bowl, whisk together the olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper.
  3. Add the cubed chicken to the bowl and toss until the chicken is evenly coated.
  4. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
  5. Preheat your grill to medium-high heat.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has reached an internal temperature of 165 degrees Fahrenheit.
  7. Remove from the grill and sprinkle with fresh chopped parsley before serving.

Notes

  • You can substitute chicken thighs for breasts if desired.
  • If you do not have a grill, you can bake these at 400 degrees Fahrenheit for 15-20 minutes.
