Simple recipe for grilled chicken skewers coated in garlic and Parmesan cheese.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup fresh parsley, chopped (for garnish)
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a medium bowl, whisk together the olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper.
- Add the cubed chicken to the bowl and toss until the chicken is evenly coated.
- Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
- Preheat your grill to medium-high heat.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has reached an internal temperature of 165 degrees Fahrenheit.
- Remove from the grill and sprinkle with fresh chopped parsley before serving.
Notes
- You can substitute chicken thighs for breasts if desired.
- If you do not have a grill, you can bake these at 400 degrees Fahrenheit for 15-20 minutes.
